Weald Smokery source the very best quality salmon from the west coast of Scotland, where the cold water produces strong, healthy fish with firm even-textured flesh. The fish is then cold-smoked by Weald Smokery over local oak chippings in traditional brick kilns just a few miles up the road from us.
